This blog post is going to be a little different from what I usually blog about, I am going to be posting some of my favorite recipes from The Oh She Glows Cookbook, by Angela Liddon. Seriously love this book, everything I have tried so far has been delicious. Now, I am not a health guru, nor am I on this strict diet. I simply want to take better care of my body and eat yummy foods. I get a lot of tips and recommendations from my sister in law, Yesika (blog name Yesika’s Kitchen click here for the link .
I don’t really care about losing weight, as crazy as it sounds I am learning to be okay with how I look and comfortable with my body. I have gained a few pounds since I got married and I am okay with that. I actually feel better about myself, I have curves now, and my clothes fit better. I use to weigh 90lb when I was in high school, part of it was the constant pressure that was placed on young girls to look a certain way and I was also battling a deep depression. I felt so tired all the time, I was foggy, I didn’t have any energy to do anything thing, not to mention I was cranky all the time (probably because I was hungry). I have more energy now , I am a lot happier with myself and now I know that it is important to nourish your body in order to nourish your soul.
This is what I ate today, feel free to modify these as you wish. I got all of these recipes from The Oh She Glows Cookbook .
I am trying to give up coffee, I am seriously addicted to coffee and for someone with major anxiety drinking a lot of caffeine , such as coffee makes my anxiety even worse. Instead of coffee I had English Breakfast Black Tea and chia pudding parfait.
Ingredients chi pudding
3 Teablespoons of chia seeds
1 cup almond milk
1/2 teaspoon vanilla ( I added extra because I love vanilla)
3 teaspoons maple syrup
Mix all the ingredients together, place in a mason jar and let them sit in the fridge overnight. In the morning just add some fruit and yummy in your tummy!
Lunch Enlighten miso Power bowl ( I made this yesterday and took the leftovers to work)
1 sweet potato
1 1/2 teaspoon olive oil
1 cup quinoa
1-2 cups shelled edamame ( my favorite)
I added sprouts but you can do without, it still taste equally good.
Preheat oven to 400 degrees
Line cooking sheet with parchment paper. Place the sweet potatoes and carrots on the sheet, ( you can coat them with coconut oil if you wish) bake for about 20 minutes.
Cook the quinoa by adding 1 1/2 cup of water to 1 cup of quinoa.
Once all done combine in a bowl and enjoy.
This actually kept me full for a long time and gave me energy to continue the work day.
Dinner”Long Weekend Grilled Salad”
1 bag of sweet organic corn
3 bell peppers
This calls for a grill but after a long day of work I didn’t want to fire up my grill. I just roasted them in the oven, at 300 degrees for about 20 minutes. Keep an eye on the veggies because they can burn easily.
I made avocado cilantro dressing to go with it.
1 lime squeeze the juice
A bunch of cilantro, a dash of sea salt and a little water.
Mix all ingredients in food processor. It is a great combo to add to this salad.
I ended the night with some tea to help me sleep better (don’t add sugar) . Once I go to bed I just start worrying about thing and my anxiety gets so bad, this tea has really helped me relax. I have been drinking it for about two years now.
